About rhizome size: Every year we get some questions and complaints about different rhizome size between varieties. The density of buds on yacon rhizome varies considerably between varieties. Although we don’t guarantee any number of buds, we generally try to include pieces that will produce at least three stems. Varieties like Bekya and Cajamarca usually have low bud density, so the propagules tend to be larger. Varieties like Morado and New Zealand have higher bud density, so the pieces can be smaller. For mailorder, larger propagules are not necessarily superior, because they usually have larger wounds and are more vulnerable to molding in transit.
