Tubers cream in color with light pink eyes. Color quickly turns yellow and then green with exposure to light. The flavor is pretty mild, although stronger than most of the white varieties. I think this is the earliest of the fall flowering varieties, but position changes a little from year to year. The flowers are usually double spurred, which is unusual. This used to be a poor performer here, but I have put it through a virus cleanup protocol several times and it now turns out a much better yield. I don’t know if that will stick, but so far, so good.
