Status: I think we should have several edible dahlias, both heirlooms and originals, available as tubers in good quantity this year. Dahlia tuber quality is very hard to predict in this climate, so nothing is available for pre-order. Sign up for our mailing list or check in around late November.
Dahlia tubers are edible, with a flavor that is something like a combination of Jerusalem artichoke and radish. The characteristics of the plant as an edible have declined as breeding has focused on the flowers rather than the tubers, but some standard varieties still have an appealing texture and flavor and we’re evaluating a number of new seed-grown varieties as well.
