Probably the only common variety outside the Andes, Tarija forms a compact plant very much like a bush bean and produces a tan storage tuber reaching up to 1/2 pound in our climate in about 8 months. The tuber will probably grow larger in warmer climates.
Ahipa seeds and foliage are not edible; eat only the tuber.
